The chain is specialized in serving food items such as burritos and tacos. The name of the chain came from chipotle, which is the Mexican Spanish name for a smoked and dried jalapeno chili peppe. The company is known for using organic ingredients and naturally raised meat in making their food items. The chain was started by Steve Ells in the year 1993 after completing his degree in Hotel line from Culinary Institute of America in Hyde Park, New York. After doing that he became a line cook for Jeremiah Tower at Stars in San Francisco and opened chain's first outlet in a former Dolly Madison ICE Cream Store near the University of Denver campus.
